Hawaiian Tortellini Pasta Salad (WIth Video)

Hawaiian Tortellini Pasta Salad is a like a party in your mouth! It's a blend of your favorite island flavors in a fabulously bright, sweet and tangy summer pasta salad. A simple recipe with an outstanding pineapple-ginger dressing, this will be a hit everywhere you take it.

s a blend of your favorite island flavors in a fabulously bright Hawaiian Tortellini Pasta Salad (WIth Video)

Chad and I are celebrating 20 years together and 10 years married this year. It is a big year. When we married it was not good timing for a honeymoon so we said we would take out honeymoon for our 1st anniversary. Well, 1st became 2nd and needless to say we never had that honeymoon. Here we are celebrating 10 years and I want to celebrate big.

Hawaii big! I am thinking about traveling to Hawaii and renewing our vows in a very intimate ceremony on the beach. I imagine a beautiful flowing floral dress, leis around our necks (Chad is wear some cool beach shorts and a shirt) and waves crashing on the beach with my beautiful daughter standing by my side. Lots of entertainment, hula dancing, luaus and food. Ohhhh, the food. That is the absolute perfect 'familymoon'!!!

I have never actually been to Hawaii, but I have dreamed of it and with summer nearing and Hawaii on my mind I was inspired to create a recipe with the essence of Hawaii in a summer salad. One of my favorite combinations that makes me think of Hawaii is ham and pineapple. The inspiration of this recipe actually came from the Hawaiian pizza (very mainland, huh?) once you try one you may never go back.

My favorite Hawaiian pizza is a hand tossed crust with marinara sauce that is fully loaded with ham, pineapple, red onion, and peppers. I took that amazing Hawaiian pizza and turned into my newest summer salad creation.

It all starts with a rainbow of vegetables, ham, tortellini and pineapple of course. But the real magic is the dressing. A sweet pineapple dressing with a little kick from ginger is the perfect complement to this fun and non-traditional Hawaiian Tortellini Salad.

This pasta salad is so summery and refreshing. I could not stop eating it. I did manage to share it with family and friends though. What can I say, I love to feed people. And they all loved it and asked for the recipe! That is the mark of a great recipe. I know you are going to love it too.

Helpful Tips to make Hawaiian Tortellini Salad:

  • Salad is excellent the next day. If you like a lighter dressing coating make 1/2 of the dressing recipe. This gives it a nice and thick coating.
  • If you do not have ginger paste, you can use finely diced fresh ginger or ground ginger to taste (start with 1/4 teaspoon).
  • This is a fantastic make ahead salad. When making ahead, use 1/2 of the dressing when preparing the salad. Reserve the remaining dressing to pour over the salad before you serve. This will keep the salad nice and creamy. If you use all of the dressing initially your pasta may soak up all the dressing.

Southern Style Macaroni Salad (NEW VIDEO)

Southern Style Macaroni Salad is the best ever pasta salad of all time. It is creamy with the perfect crunch and a little tang. It is exactly what I think of whenever summer sides come to mind. This recipe is so easy you can whip it up in less than 30 minutes.

is the best ever pasta salad of all time Southern Style Macaroni Salad (NEW VIDEO)

I shared stories of my mom with you when we shared her Southern Style Potato Salad recipe which is so precious to me.

Now, I am sharing another of her famous recipes.  Her southern-style macaroni salad was on our table at every summer gathering, right next to that potato salad.

I remember she had this huge milking pail from my great grandma's childhood farm that she used to serve it in.  I love that old pot.

A few weeks before my mom passed away she gave it to her best friend of 30 years, Susie Q.  I was sad to see it go, but Susie Q is like a mom to me and I know she will cherish it.

Not to mention she promised to leave it to me in her will.  Love you Susie Q and thank you for sharing these stellar recipes with my family so many years ago.

I have to tell y'all that your responses last week were overwhelming.  I can't even begin to express how much your comments, emails and messages mean to us.

As a matter of fact, keep commenting.  We love to hear from you.

My family enjoyed this recipe at every family gathering for most of my life and I am so happy to be able to share it with you.

Nana's Southern Style Macaroni Salad is so easy to make, you may find yourself preparing it every weekend.

A creamy dressing with added hard boiled eggs for richness, celery and onion for crunch and tuna for a little added protein.

This is my favorite macaroni salad recipe and I am sure you are going to love it too.

Best Ever Strawberry Spinach Salad + VIDEO

This Strawberry Spinach Salad will rock your world! This simple recipe features fresh berries, avocado and candied nuts in the best salad ever.

This simple recipe features fresh berries Best Ever Strawberry Spinach Salad + VIDEO

Fresh crisp spinach salad is taken to another level with bursts of sweetness from fresh summer strawberries and buttery avocado. It is tossed in a sweet and tangy vinaigrette and topped with crunchy nuts and creamy cheese.

We celebrated the holidays with my husbands family as we usually do this past Christmas. There is always an amazing spread of decadent food, but I have to admit I really look forward to the salads.

Chad is not a big salad eater so I don't usually make fancy salads unless we are having a party or company.

I tend to grab whatever I have in the house and put together a simple salad that will keep for a long time because I am the only one eating it.

This simple recipe features fresh berries Best Ever Strawberry Spinach Salad + VIDEO

But, I just really love a good salad. A few years ago Chad's sister prepared a delicious one that really knocked my socks off.

It was spinach salad with strawberries, blueberries, avocado and a sun-dried tomato dressing. I am sure there were other ingredients but those really stuck with me.

I must have eaten 4 bowls of it and wished there was more.

Strawberry Spinach Salad Ingredients

So, of course this spring when I started craving strawberry spinach salad all I could think of was how amazing it would be if I added blueberries and avocado.

So, I did and it really sparks up the salad.

The buttery avocado and bright blueberry flavors add so much to this new favorite.

I started thinking about crunchy nuts and creamy cheese. So, I add blue cheese and candied nuts on the top

This simple recipe features fresh berries Best Ever Strawberry Spinach Salad + VIDEO

This divine recipe all starts with baby spinach and fresh summer berries. Thinly sliced red onions are added to enhance the flavor.

Then it is tossed in a fabulous sweet and tangy vinaigrette and topped with fresh avocado, buttery candied pecans and melt in your mouth blue cheese.

You can use walnuts instead of pecans if you prefer them. Strawberry walnut salad sounds equally delicious!

This spinach salad is so summery and refreshing. It is truly my favorite salad of all time and I can not stop eating it. I hope you feel the same way!

Spinach Salad Recipe Notes

  • I love to snack on the candied pecans and they are great on ice cream. So, I double the candied pecan recipe and save 1/2 for later. The recipe as written will allow about 5 candied pecans per serving.
  • The dressing may solidify in the refrigerator. It is best to allow dressing to sit on the counter. Shake well before using.
  • If you are making the salad ahead. Prep the ingredients and refrigerate. Then dress the salad about 15 minutes before serving. This will help keep the spinach from wilting.
  • Mozzarella, feta or goat cheese are also amazing on this salad.
  • Lighten it up by subbing plain pecans for the candied ones and eliminate the sugar from the dressing.
  • Add sliced grilled chicken for a fabulous summer meal.

Summer Corn Salad (With Video)

Summer Corn Salad is a bright refreshing taste of summer. Garden fresh corn and tomatoes come together with fresh mozzarella, herbs and a glorious dressing that really gives it an even lighter fresher taste. This simple recipe is the perfect summer side!

Garden fresh corn and tomatoes come together with fresh mozzarella Summer Corn Salad (With Video)

I can not get enough of salads during the summer months, but lately lettuce has not been my thing.  So I have turned to fabulous vegetable salads like my Best Ever Broccoli Salad to satisfy this craving.

Pasta salads really rock my world, but on days like today where I am longing to taste the freshness of summer.

I grabbed a bunch of garden fresh ingredients (okay, they are actually market fresh) and tossed them with an incredible lemon and garlic dressing and sat down to enjoy lunch.

The fresh corn takes me back to a few years ago when Chad and I planted a garden full of corn.  I mean he is from Iowa, we should be able to grow corn...  Even in Arizona.

Well, I tended that corn, fertilized it (by shaking the tassels) watered it by hand.  That corn garden was my baby.

After a full season of tending the corn, using all natural gardening alternatives to deter pests and loving on my corn (can you tell I really babied this corn garden) the day finally came to harvest the corn.

The harvest: 3 ears.  Yes, you read that correctly my garden of corn stalks (12 or so) yielded 3 ears of corn.

I have to tell you though, my excitement was not suppressed by the low yield.  Chad and I took 2 ears of corn and dropped them in boiling water (with nothing added).

After a few minutes we took them out of the pot and ate them.

That was the best corn I have ever eaten in my life. So what happened to the 3rd ear you ask? I ate it straight off the cob. It never made it to the kitchen.

AMAZING and it was so inspiring that I started enjoying fresh corn on the cob in dishes like this one.  I love it, and you will too.

Helpful Tips to make Summer Corn Salad:

  • You can cook the corn if you prefer, I really enjoy the fresh taste of it uncooked in this salad.  The acid in the lemon juice will mellow out the starchiness of the corn and create a fabulous flavor.
  •  If you are traveling with this salad or making ahead; you can prep the salad and the dressing and wait to pour dressing over salad until ready to serve.  Refrigerate until ready to serve.

Bacon Ranch Tortellini Pasta Salad + VIDEO

Bacon Ranch Pasta Salad is the ultimate summer side! It starts with copious amounts of bacon, a perfectly tangy ranch dressing, fresh vegetables, and tortellini pasta.

Pasta salads are a summer favorite of ours, like our ever-popular Hawaiian Tortellini Pasta Salad and my favorite Italian Roasted Vegetable Penne Pasta.

It starts with copious amounts of bacon Bacon Ranch Tortellini Pasta Salad + VIDEO
We officially broke 100 degrees here in Arizona last week. That is when I automatically start craving and looking for cold side salads. I love pasta salads.

They are one of my favorites. They pretty much incorporate all my favorites into one bowl: pasta, cheese, veggies, and yummy dressings and toppings. That is summer salad perfection.

Luckily for me and my family and friends, Chad and Munchkin are not as keen on pasta salads as I am so I am fortunate enough to share with our loved ones.

Oddly, I can't seem to eat an entire recipe on my own and I love to love to feed my loved ones. Something about it is so fulfilling. Am I the only one?

It starts with copious amounts of bacon Bacon Ranch Tortellini Pasta Salad + VIDEOLast week I was able to share with several of our friends and it received rave reviews! I have to say this was one time that I actually thought "maybe I should have kept more for myself".

It was such a fabulous lunch. To lighten it up a bit I added in more veggies and kept everything else the same. Check out the cook's notes for more information on that.

Loaded with fresh vegetables and tortellini pasta this Bacon Ranch Tortellini Pasta Salad is almost perfect, add a sweet and tangy dressing to the mix and you have yourself a must-try recipe!  My new favorite summer salad and I am sure you will love it too.

I took inspiration from my favorite Greek Tortellini Salad and loaded this pasta salad with fresh vegetables and tortellini pasta.

The ranch dressing and the bacon really make this salad Bursting with flavor it is sure to be a hit at your summer get together!

Helpful Tips to make Bacon Ranch Pasta Salad:

  • It is important to not overcook your tortellini otherwise it will fall apart when tossed.
  • After pasta is rinsed and drained, immediately add it to a large bowl then toss it with half of the dressing to keep it from sticking.
  • This salad is excellent the next day.  When making ahead, use 1/2 of the dressing when preparing the salad and reserve the remaining dressing to pour over the salad before you serve it.
  • For the cheese, I prefer to use sharp cheddar, cut into bite-size pieces. If you prefer you can substitute any sliceable cheese.

  • Colander – this kitchen essential makes life so much easier!  You can use it to drain pasta or wash veggies and fruit.
  • Cutting Board- A big good solid cutting board so you can prep all your veggies on one surface.  I use my cutting board daily so it’s worth the investment.
  • Quality Knives- Quality knives make prep time much quicker and are important for safety as well.  If you make one kitchen investment, I believe it should be in quality knives.

Bacon Ranch Tortellini Pasta Salad

Bacon Ranch Pasta Salad is the ultimate summer side! It starts with copious amounts of bacon, a perfectly tangy ranch dressing, fresh vegetables and tortellini pasta. It's the perfect summer salad bursting with vibrant colors and flavors.
prep time: 10 MINScook time: 10 MINStotal time: 20 mins

Ingredients

  • 1 (15-ounce) bag cheese-filled tortellini pasta
  • 16 ounces grape tomatoes, halved
  • 2 bell peppers (1 orange and 1 yellow), cut into bite-size pieces
  • 1 English cucumber, cut into spears and then sliced
  • 1/2 medium red onion, rough dice
  • 1 (4.25-ounce) can sliced black olives
  • 4 ounces sharp cheddar cheese, cubed
  • 1 cup bacon crumbles (1 pound cooked, cooled and crumbled)

Easy Ranch Dressing

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 3 tablespoons dry ranch salad dressing mix
  • 2 tablespoons fresh lemon juice
  • 2 cloves minced garlic (or 1 teaspoon garlic paste)
  • 1 teaspoon course ground black pepper

Instructions

  1. Bring a large pot of water to a boil. Cook tortellini according to directions on the package (do not add salt to the water). Drain and set aside.
  2. Meanwhile, prepare the salad dressing: In a medium bowl whisk together mayonnaise, sour cream, and milk. Add remaining dressing ingredients. Place in refrigerator until ready to dress the salad.
  3. Combine tortellini 1/2 of salad dressing and toss to combine.
  4. Add remaining salad ingredients in a large bowl, toss until combined. Reserve the remaining dressing.  Refrigerate until ready to serve.
  5. When ready to serve, pour the dressing over the salad and gently toss with salad tongs until well coated.

DONNA'S NOTES

  1. The salad is excellent the next day. When making ahead, use 1/2 of the dressing when preparing the salad and reserve the remaining dressing to pour over the salad before you serve.
  2. It is important to not overcook your tortellini otherwise it will fall apart when tossed.
  3. After pasta is rinsed and drained, immediately add it to a large bowl then toss it with half of the dressing to keep it from sticking.
  4. If you prefer your salad more vegetable heavy, add 1 more orange pepper, 1 yellow pepper, 1 cucumber. Follow the instructions for the remaining steps.
  5. For the cheese, I prefer to use sharp cheddar, cut into bite-size pieces. If prefer you can substitute any sliceable cheese.
